Step 1: Wash and chop the coconut.
Put the coconut into a bowl.
Add the coconut oil and stir to combine.
Let the mixture sit for about five minutes to allow the coconut oils to absorb.
Step 2: Add the sugar and salt.
Add a tablespoon or two of the coconut mixture into a food processor and pulse to combine the ingredients.
Step 3: Heat the oil in a skillet over medium-high heat.
Add two tablespoons of the melted coconut oil to each pan and fry for about 5 to 10 seconds.
Step 4: Once the coconut is hot, add a teaspoon of the sugar.
Add another tablespoon of the liquid mixture and pulse until the sugar is incorporated.
Step 5: Remove from heat.
If the mixture starts to brown, remove it from the heat and add a tablespoon of water to thicken it.
Step 6: Repeat with the remaining coconut mixture.
Add more coconut oil as needed to the batter.
